Freaking Friday Carrot And Banaba Cake smallBeing lactose intolerant means that I need to think twice, three, four times before I put any food in my mouth…so paleo-style is how I roll.

Here’s a quick recipe I came up with on one Friday night;  homemade carrot and banana cake. It’s lactose free, low-carb and with no added sugar plus it’s extremely easy to make.

 

 

Ingredients (What your fridge gives you on a Friday night)

  • 1 banana
  • 3 eggs
  • 1 carrot – finely shredded
  • baking powder
  • coconut flakes or desiccated coconut (2-3 tbsp)
  • cinnamon
  • blueberries (or any other fruit)
  • Optional – Protein powder – I use MyProtein Impact Whey 

How-To Magic

  1. Add banana, eggs, coconut flakes and 1 ts of baking powder to blender and mix it for a minute or so
  2. Shred the carrot as thin as possible
  3. Find some bowl that can go to oven
  4. Turn on the oven (don’t know the exact temperature as the numbers on my oven have simply vanished, lol)
  5. Mix everything in the bowl and put into oven
  6. Wait about 20min or maybe less; I never check the time or take measures
  7. Take the cake out and serve with blueberries and cinnamon on top (preferably on a Xmas plate)

 

The biggest secret…

Swap/change/add any ingredients you like to make your own paleo Friday cake 🙂 You can eat as a treat or I will have it as cool breakfast on Saturday.
