KAB pudding is one of my favourite snacks not only because it’s super easy-to-make and tasty but it’s full of kale..and I love kale! It’s my power-food I would eat 24/7 if I could.

You can have the pudding as a breakfast after your morning run or as a snack before your afternoon sessions. The best think is that it it won’t bloat you which you really don’t want to happen before your afternoon training.
So here it is…
This recipe will make you one pretty tasty serving! Makes 1 serving
I always have at least one frozen banana in my freezer as it tastes better than ice cream…yep, trust me! If you made smoothie packs in advance, the kale and banana should be in a ziploc bag in the freezer..
- kale leaves from 1/2 bunch (about 3 cups)
- 1 large banana, peeled and cut into pieces then frozen
- 1/2 avocado
- 1/2 cup unsweetened almond milk or coconut milk or skimmed
- 1 tablespoon nut butter (almond, cashew, peanut) or honey
- cinnamon or cocoa powder
This part is pretty hard….
Add all ingredients to a high speed blender and puree until smooth – should take up to 2 minutes.
I always cut the banana into small chunks before I put in the freezer. If you’re one of those people who prepare their snacks/meals in advance then you can put the banana, kale and avocado into a ziploc bag.
